KNOW YOUR SPIRIT – TEQUILA VS. MEZCAL

A good way to understand Mezcal is to compare it to Tequila, which is today much more familiar in our world. Mezcal is the broadest and oldest category of agave spirits.

This means Tequila is a Mezcal, as any distilled spirits made from agave!
In practice, Mezcal is made from over 30 varieties of agave while Tequila must be made from at least 51% Weber Blue Agave.

The most common agave used to make Mezcal is the Agave Espadin used by about 90% of Mezcal makers including Se Busca Mezcal which uses 100% Agave Espadin.

To cook the agave, Mezcal makers use the traditional process of underground cooking where the agaves are placed into a pit and covered with hot coal.

They are then sealed with leaves and are kept to allow being cooked for 3 to 7 days. This is where Mezcal gets its smoky flavors.

For Tequila, makers use either above ground steam-heated brick ovens or stainless steal pots.

In Tequila making, the agave flesh does not come in contact with any open fire or smoke. As a result, tequilas do not have the rich, smoky aromatic of Mezcal.

Both Mezcal and Tequila are typically distilled twice. Mezcal however is most commonly done using small copper pot stills in a more artisanal process, whereas most Tequilas are made using large copper pot stills or large continuous stills.

Both Tequila and Mezcal have sophisticated flavor profiles and those of you who enjoy rich complex flavors such as fine whiskies, cognacs or other aged spirits, will definitely appreciate the taste of Se Busca Mezcal.

Joven

Cooked agave and mesquite on the nose, this young mezcal opens with a palate of nuts, fruit and green vegetables and lands in a sweet, weighted finish with a mellow spicy kick.

Reposado

Sweeter notes are found in this aged mezcal. Coconut, sweet almond and hazelnut can be uncovered in this complex spirit that expertly intertwines with notes of oak, cereal and mesquite delivering a rebellious bouquet. Aged 4 months in French Oak Barrels.

Anejo

A perfected balance of rich agave and mesquite this aged mezcal delivers a vigorous palate of sweet oak, dates and raisins and lands in an explosion of green vegetables and spicy cooked agave with a long-textured finish. Aged 18 months in French Oak Barrels.
